  1. Prepare the Ingredients:
  2. If you haven’t done so already, fire-roast the green chile peppers until the skin is charred and blistered. Once cooled, roughly chop them.
  3. Roast the red onion, garlic cloves, and quartered limes over open fire or roast them in the oven.
  4. Roughly chop all ingredients, add salt and olive oil, then put in the blender or use a hand-mixer to mix until a coarse texture.
  5. Taste and adjust seasoning if necessary, adding more lime juice and/or red chili pepper if desired.
  6. For the best flavor, let the sauce sit in the refrigerator for about 30 minutes to allow the flavors to further develop.
