- Prepare the Ingredients:
- If you haven’t done so already, fire-roast the green chile peppers until the skin is charred and blistered. Once cooled, roughly chop them.
- Roast the red onion, garlic cloves, and quartered limes over open fire or roast them in the oven.
- Roughly chop all ingredients, add salt and olive oil, then put in the blender or use a hand-mixer to mix until a coarse texture.
- Taste and adjust seasoning if necessary, adding more lime juice and/or red chili pepper if desired.
- For the best flavor, let the sauce sit in the refrigerator for about 30 minutes to allow the flavors to further develop.
